Fish Cakes with a Mango Salad

Fish Cake Recipe

The "I'm so hungry and I'm running late" kinda Fish Cakes


Serves 2 



 Fish Cakes

2 Cans of Tuna

1 Egg

2tsp Paprika

1tsp Cumin

Handful of Coriander

1 Spring Onion

3 Cloves of Garlic

Splash of Lemon Juice

Salt to taste

Mango Salad

1/2 a Mango

Handful of Cherry Tomatoes

1 Bell Pepper

6 Radish

2 Handfuls of Mixed Salad Leaves



    1. Chop the spring onion into thin slices
    2. Mince the garlic
    3. Finely chop the coriander
    4. Crack the egg into a bowl
    5. Add paprika, cumin, lemon juice and salt, then whisk with a fork
    6. Add garlic, coriander and spring onions, then mix
    7. Add the tuna to the bowl and mix with your hands
    8. Create small patties, about the size of your palm
    9. Heat a pan over a medium heat and add oil. Next, add the patties but be careful not to overfill it
    10. Leave patties to cook for around 2-3 minutes and flip once nicely browned
    11. Remove from the pan once both sides are browned
    12. Add salad for a light meal. We've made a Mango salad but feel free to add whatever vegetables you have available
